CÉ LA VI Singapore is the classic place to bring visitors of Singapore out for a drink! You go there for great views on the most known landmark of Singapore, the Marina Bay Sands Hotel.
Now that we can’t travel nor can we get any visitors, it is actually a good reason for us residents to make our way to Singapore’s iconic rooftop bar CÉ LA VI for the brand new signature cocktail menu they have launched across its three venues of The Sky Lounge, Restaurant and Sky Bar.
Drawing on over two decades of bartending experience across seven different countries, Lead mixologist, Andrew Hyman has designed distinct drinks for the crowd and ambience at each of CÉ LA VI’s unique spaces. They have been inspired by the region’s diverse culture and abundance of local ingredients, creating a rich flavour profile. The menu made sure to have drinks for all tastes, from sweetness or bitterness to strength and adventurousness.
Sky Bar Signature Cocktails
Find SkyBar Signatures (S$25++ each) which feature a mix of familiar and more exotic ingredients. If you like something fruity and herby, get the Paper Lantern with Don Julio Blanco tequila, physalis, passion fruit and thyme.
For the Old Fashioned fans, get CÉ LA VI’s twist, Old Memories with coconut, corn and sago pudding dessert in Thailand with Rebel Yell Rye, coconut, pandan, popcorn and bitters.
If you want to try something different, try the Yuzito, a yuzu-infused mojito with Tanqueray London Dry Gin, melon, yuzu, mint and bitters, or the Native Garden, with influences of Thailand and Vietnam, also with Tanqueray London Dry Gin, added with cassis, hibiscus tea, cinnamon, rosemary and Fever Tree Indian Tonic Water.
CÉ LA VI’s Restaurant Signature Cocktails
The Restaurant Signatures, also pricing at S$25++ each, are created using global ingredients and techniques to pair seamlessly with CÉ LA VI’s modern Asian cuisine. On the list of the drinks to try and suggested by the team, there’s the Border Crossing #2, with influence of Nyonya cuisine blending Chinese ingredients with various distinct spices used by Malay and Indonesian communities, with Havana 3 Year Old Rum, coconut, cucumber, pineapple sambal and sesame.
On a more sour taste, Even is a Japanese twist on the classic New York Sour with Monkey Shoulder whisky, Shichimi Togarashi Spice and hibiscus tea.
For those who prefer Vodka as a base, there is the Mojokerto Regency, inspired by Wedang Jahe Tea, a traditional drink from East Java, Indonesia, with Ketel One Vodka, coconut, pandan, ginger, kaffir lime, lemongrass and bitters.
Sky Lounges Signature Cocktails
At my favourite spot at CÉ LA VI, you can find refreshing drinks suitable to enjoy from day to night whilst overlooking Marina Bay and the city lights beyond! The Sky Lounge Signatures (S$25++ each) includes the Tropical Savanna with Aperol, coconut, pineapple and hunter’s spirit, the Once in a Life Time with Tanqueray London Dry Gin, ginger, wasabi, nori and soda, The Epicurean with Monkey Shoulder whisky, medium-dry vermouth, coconut and pandan and the Golden Age with Havana Club 3 Year Old Rum, kaffir lime and lemongrass.
Out of the three menus, my favourite drink is the Old Memories!
The cocktail menu at this venue is actually quite extensive, so you have many options. If you really want to try something mysterious, you can go for Bartender’s Handshake (S$23++), which changes monthly based on the team’s latest creations. It is a special concoction that showcases your Mixologist’s favourite spirit, along with unique flavours of the season.
